Directions
Prepare the Mini Tapioca Pearls
1. Measure 2 cups of water for every 1/4 cup of boba being prepared into a saucepan. Bring the water to a boil over high heat. Add the boba and stir gently until they begin floating to the top of the water.
2. Cook over a low flame and stir gently and occasionally for 7 minutes or until your desired chewiness.
3. Optional: Steep the cooked tapioca (Covering the pot) for 5 minutes (Recommended)
4. Drain the water.
5. Once cooked, transfer to a bowl of fructose syrup and allow to cool. For best results, use the pearls as soon as they’re cool.
